INGREDIENTS:
3 cups leftover white rice
1 cup canned corned beef
1 raw egg, beaten
1 tsp garlic, minced
Dash of salt
3 tbsp cooking oil
3 eggs, cooked sunny side up (for optional topping)
HOW TO COOK:
In a wide pan, pour- in the cooking oil and heat.
When the oil is hot enough, add- in the raw beaten egg.
Cook one side for 1 minute in medium heat.
Turn the egg over and cook the other side for another minute.
Remove the egg and set aside on a clean plate (reserve oil in pan).
In the same pan, brown the minced garlic.
Add- in the corned beef and cook for 2 minutes.
Add- in the rice and stir- fry for 5 minutes.
Add- in the cooked egg and manually break into smaller pieces while cooking.
Add a dash of salt and then continue to stir- fry for more 2 minutes.
Remove from heat and transfer to plates.
Top the fried tice with the sunny side up eggs. Enjoy!
