Easy Ube Maja Blanca Recipe



INGREDIENTS:

For the Coconut Milk Layer:

  • 1 can (400 ml) coconut milk

  • 3 tbsp sweet corn kernels, drained

  • ½ cup corn starch

  • ½ cup sugar

  • 1 tsp vanilla extract

For the Ube Layer:

  • 1 tsp ube extract

  • 1 can (400 ml) coconut milk

  • 3 tbsp sweet corn kernels, drained

  • ½ cup corn starch

  • ½ cup sugar

For the Topping:

  • ¼ cup grated cheese

HOW TO COOK:
  1. Prepare an 8 × 8- inch pan by lightly greasing it with oil. Set aside.

For the Coconut Milk Layer:

  1. Combine all the ingredients in a sauce pan.

  2. Stir well to dissolve the sugar and corn starch.

  3. Apply medium heat and bring the mixture to a boil.

  4. Stir continuously until it reaches a sticky consistency. Transfer to the pan.

For the Ube Layer:

  1. Using the same sauce pan, combine all the ingredients and stir well to dissolve the sugar and corn starch.

  2. Bring to a boil over medium heat, stir continuously until you reach the same consistency with the coconut milk layer.

Assembly:

  1. Pour the Ube mixture on top of the coconut mixture.

  2. Spread and flatten evenly as possible.

  3. Top with grated cheese.

  4. Set aside and let it cool at room temperature.

  5. Serve and enjoy!
